1 tbsp (15 mL) unsalted butter
1 apple, peeled, cored and diced
1 tsp (5 mL) finely chopped fresh thyme
1/2 tsp (2 mL) finely chopped fresh rosemary
2 tbsp (30 mL) dried cranberries
2 tbsp (30 mL) honey
2 tsp (10 mL) lemon juice
2 tsp (10 mL) brown sugar
2 tsp (10 mL) red wine vinegar
1 round (250 g) Brie cheese, chilled
1 bag (170 g) Terra Original Chips
1. Melt butter in skillet set over medium heat; cook apple, thyme, rosemary and salt for 3 to 5 minutes or until apple starts to soften. Stir in cranberries, honey, lemon juice, brown sugar and vinegar. Cook for 5 to 8 minutes or until golden brown and caramelized. Let cool completely.
2. Preheat oven to 350˚F (180°C). Place Brie on parchment paper– lined 9-inch (23 cm) pizza pan or small baking sheet. Pile mixture on top and around Brie. Bake for 5 to 8 minutes or until Brie starts to ooze but is not melted. Serve warm with chips.
• Use baking apples, such as Cortland, Fuji, Golden Delicious or Granny Smith.
• Substitute a pear for the apple if desired.
