Mediterranean 7-layer Dip

A few Kalamata or black olives, pitted and sliced
1/2 tsp dried oregano
Spectrum® Organic Extra-virgin Olive Oil, to taste
Salt and black pepper

1 package Casbah® Hummus, prepared
Avocado Mash
3-4 large ripe avocados, pitted and mashed
2 tbsp lemon juice
1 tbsp fresh chopped parsley or cilantro
2 tbsp chopped green onions
1 tsp (5 mL) salt
1/4 tsp regular or smoked paprika
1/4 tsp ground cumin

2 cups Greek Gods® Traditional Plain Greek Style Yogurt, Organic
2 tbsp lemon juice
1 small garlic clove, minced
3/4 cup English cucumber, peeled and diced
1/2 tbsp salt (for cucumbers)
1 tbsp each: fresh dill and mint, chopped
salt and ground black pepper

To make Tzaziki:

  1. Optional: For a thicker tzaziki, put the yogurt in a cheesecloth-lined colander. Fold cheesecloth to cover yogurt, perch colander on a large bowl and chill up to 12 hours.
  2. Place diced cucumber in a colander (on a deep plate), sprinkle with salt and let sit 30 minutes. Stir to drain well and pat dry with a paper towel.
  3. In a blender, combine drained cucumbers, garlic, lemon, herbs, salt and pepper. Blend well, then mix with yogurt. Adjust seasoning. Chill 1-2 hours before using.

To make Avocado:


  1. Coat avocado in lemon juice to avoid browning. Season with herbs and spices to taste.


To assemble:


  1. In a transparent medium bowl for effect or large serving plate for convenience, spread hummus on bottom.
  2. Top with successive layers of avocado, diced red peppers and tzaziki.
  3. Over the top, arrange tomato, cucumber, feta and olives. Sprinkle with oregano, salt and pepper. Drizzle with olive oil and serve.
