1 bag (160 g) Tropical Terra® Chips
2 tbsp (25 mL) chopped fresh chives
2 tbsp (25 mL) chopped fresh parsley
1 tbsp (15 mL) finely grated lemon zest
1/4 tsp (1 mL) each salt and pepper
6 skinless salmon fillets (4 oz/125 each)
2 tbsp (30 mL) Dijon musta

  1. Preheat oven to 400°F (200°C). In food processor, pulse chips to resemble coarse crumbs; toss with chives, parsley, lemon zest, salt and pepper.
  2. Place salmon fillets on parchment paper–lined baking sheet. Brush evenly with mustard; coat salmon with chip mixture, patting gently to adhere. Bake for 12 to 15 minutes or until crust is crisp and fish flakes easily when tested with a fork.
